Sooji halwa is the first sweet that I learnt to make.We usually make this along with Upma.A popular sweet during weddings too.A more popular one to be served along with upma for wedding breakfasts.
We also call this as Kesari Bhath.Made with roasted rava in ghee and added with milk and cooked.
I have mixed kesar in half cup of milk and added it to the rest of the milk while cooking with roasted rava.
Ingredients,
Sooji- 1/2 cup
Ghee- 2 tbsps
Cashews- 1 tbsp (broken)
Raisin- 1 tablespoon
Sugar- 1/2 cup
Milk- 1 cup
Warm milk- 1/2 cup
Saffron- 11-12 strands
Green cardamom/Elaichi- 3 ( powdered)

Green cardamom/Elaichi- 3 ( powdered)
- Warm milk and add kesar to it.
- Take ghee in a pan and roast the cashews and raisins till the raisins bulge.
- Add rava/ sooji and roast till until slightly golden brown on a low flame.Add sugar.
- Slowly add milk and then the milk with saffron.
- Cook until it gets a little thicker.
- Turn of the heat and cover it with a lid.
- Sprinkle elaichi powder.
- Transfer it to a cool bowl to serve.
Soak saffron with 1/2 a cup of warm milk.
In a pan take ghee and cashews and raisins.
Roast till the raisins puff up
Add sooji and roast until it becomes slightly golden brown.
Add sugar.
Add milk.
Add warm milk with saffron.
Stir on a low flame until the sooji thickens.
Sprinkle cardamom powder and cover with a lid.
