Nippattu / Rice crackers

Nippattu are deep fried snacks as they suggest these rice crackers made from rice flour.This recipe is a part from my friends,a part from Internet also. This time I didn't want to take any chances with this coming out little hard. I have used shortening to make them crispy. Everytime I used bring these snacks from grocery stores.These are so popular in India as bakery snacks.This time I am a little confident about my snack recipe.

Ingredients,
Rice flour- 1 1/4 cups and a little extra for dusting and rolling( I ran out of rice flour so used wheat flour for dusting and rolling)
Chick pea flour( besan) - 2 tbsps
Urad flour- 2 tbsps
Cumin seeds- 1/2 tbsp
Red chilli powder- 3/4 tbsp
Roasted chana dal and peanuts- 1/4 cup each
Salt- 1/2 tbsp
Oil - 2 tbsps
Vegetable Shortening- 1 tbsp ( 1 heaping tablespoon or you can use Dalda)
Water - enough to knead into dough.
Cooking oil - For deep frying


  1. Roast urad flour and add it to the rice flour.
  2. Add cumin seeds,salt and red chilli powder.Add chick pea flour( besan)
  3. Add coarsely ground roasted chana dal and peanuts.
  4. Heat oil and shortening and add it the flour mix.
  5. Mix the whole thing with water and make dough.( like chapathi dough)
  6. Roll this  and cut small round shapes with a cookie cutter.
  7. Poke with fork ,so that the air can escape.
  8. Deep fry them in oil until the ends start getting brownish.
  9. Store them in an air  tight jar.


Take Rice flour

Add roasted urad flour .

Add red chilli powder,cumin seeds ,salt and 
chick pea flour(besan).

Add 1/4 cup of coarsely ground roasted chana dal
and peanuts.

Add heated shortening and oil.

Make this a lump by adding water.

Cut small round shapes and poke with a fork to 
let the air out and deep fry them on both the sides.
