This is a low calorie vegetable soup and more than anything you can do this soup with any combinations of vegetables.A few vegetables are sautéd and then cooked in vegetable broth until the vegetables are cooked.
You can also serve this for dinner with some fresh bread with butter.
Ingredients,
Onion - 1/2 cup ( finely chopped )
Garlic - 2 cloves ( finely chopped )
Parsley - 1/4 cup ( chopped )
Carrots - 1 cup ( cut in chunks)
Celery - 1 cup ( cut in chunks)
Mushrooms- 1/2 cup ( cut in pieces)
Vegetable Broth - 3 cups
Olive oil - 1 tablespoon
A dash of salt and black pepper.

- In a pot take olive oil and add garlic and onions.Sauté and then add parsley.
- Keep stirring for a few seconds.
- Add carrots,celery and mushrooms and sauté them.
- Add vegetable broth and add a dash of salt and black pepper.
- Cook on low flame for 20-25 minutes or until the vegetables are soft and tender.
- Garnish with chopped parsley.
In a pot take olive oil and add garlic and onions.Sauté and then
add parsley.
Add the chopped veggies and stir fry them too.
Add vegetable broth ,salt and black pepper.
Cook for 20 - 25 minutes.
Finally garnish with chopped parsley .
