Hot and sour soup is an Asian soup which is both hot and sour.This soup is made up of broth ,I have used vegetable broth.For spice I have used sri racha sauce and for tangy ness I used rice vinegar.
I have made this an Indo- Chinese way since I don't use any meat in my recipes.I have added tofu to compensate the absence of meat.
Ingredients,
Sweet bell peppers - 1/2 cup ( chopped)
Cabbage - 1/2 ( chopped )
Carrots - 1/2 cup ( chopped in small pieces)
Tofu - 7 oz (I used half of the organic tofu packet I bought.)
Ginger - 1 tablespoon (minced)
Garlic - 2 pods ( minced)
Vegetable broth- 2 cups
Water - 1/2 cup
Corn starch - 1 tablespoon
Olive oil- 1/2 tablespoon
Sesame Oil - 1/2 tablespoon
Sri racha sauce - 3/4 tablespoon ( vary according to the spice level you want it )
Soy sauce- 1 tablespoon
Rice vinegar - 1 tablespoon
Salt - According to taste.

- Take a pot and add vegetable broth and keep it on simmer.
- In a pan take 1 teaspoon of olive oil and sauté the minced ginger and garlic.
- Add chopped vegetables like bell peppers,cabbage and carrots.sauté for a minute.
- Add the sautéd veggies to the pot of vegetable broth.
- Keep the pot on medium flame and add olive oil,sesame oil,sri racha sauce,soy sauce, rice vinegar,salt and chopped tofu.
- Take water and add cornstarch.Mix well and add it to the pot of vegetable broth.
- Stir and heat it .
- Serve hot immediately.
Take vegetable broth in a large pan and keep it on
stove.Keep the stove on low flame.
Take olive oil and saute the minced ginger and garlic.
Add the chopped veggies and saute them too.
Take half of the tofu and cut into cubes.
Keep the pot on medium flame and add olive oil,sesame oil,sri racha
sauce,soy sauce, rice vinegar,salt and chopped tofu.Add sauted
veggies and tofu cubes to the pot.
Add water with corn starch.Stir well.
Heat on low flame and serve hot.
