Spinach Tofu/Palak Tofu


Palak tofu is a vegan version of Palak panner.Palak paneer is curry prepared with spinach and Indian cottage cheese cubes called paneer.This is a very healthy curry which is good to eat with plain cooked Basmati rice or Indian flat breads like chapathi,roti or even naan.
This is a spicy curry and can even be made ahead for dinners.I have used coconut milk instead of using milk cream.If you do not have coconut milk you can also use milk cream.


Ingredients,
Spinach/Palak - 4 cups (roughly chopped)(Soak the chopped spinach leaves in a large bowl of water before adding to the curry so that there are completely cleaned)
Tomato - 1 cup (cut into cubes)
Onions - 1 cup ( cut into 1 cm sizes)
Tofu - 1 cup ( cut into 1 inch cubes and fried)
Coconut milk /Cream - 1/2 cup
Ginger and garlic paste - 1 teaspoon (I used 1/2 an inch of ginger and 2 garlic pods and made into paste)
Coriander powder- 1 teaspoon
Cumin powder - 1 teaspoon
Red chilli powder - 1/2 teaspoon (vary according to taste)
Salt - 1 teaspoon
Green Cardamom - 2 (slightly slit)
Mustard seeds - 1 teaspoon
Turmeric - 1/2 teaspoon
Garam masala - 1 teaspoon.
Oil- 1 tablespoon


  1. Take a tablespoon of oil in a pan and add green cardamom and mustard seeds.
  2. Once the mustard seeds start to splutter add onions anf fry till translucent.
  3. Add ginger and garlic paste and saute.
  4. Add tomatoes and stir till the tomatoes are cooked.
  5. Add chopped spinach leaves and cook until the spinach leaves are cooked .
  6. Add coconut milk,mix and  add turmeric,coriander powder,cumin powder,garam masala,red chilli powder and finally salt.
  7. Let this cook for 5 minutes on low flame.
  8. Fry tofu in oil and sprinkle with garam masala and salt.
  9. Add tofu and stir in the curry.
In a pan take 1 tablespoon of oil and add mustard seeds
and green cardamom.


Add ginger and garlic paste.Add chopped onions
 and saute till translucent.


Add chopped tomatoes and stir until the tomatoes
 are cooked.

Add spinach leaves and cook till the spinach 
leaves are cooked.


Add coconut milk,turmeric,coriander powder,cumin
powder,red chilli powder,garam masala and salt.

Let the curry cook on low flame.


Fry the tofu cubes and sprinkle garam masala and salt.

Add the cubes to the curry and serve with rotis or rice.
