Bajra Roti

Bajra flour Bhakri is a delicacy of the uttara karnataka.This is an unleavened bread made with hot water,yes no need of oil to knead this flour or to spread while making this on the tava either.This is done just like the juwar flour bread.
Bajra bhakri is an exemplary bread for festival Sankranthi.You will see these kind breads carried by the farmers at crack of the dawn for breakfasts as well as  lunches.Bajra bhakri is garnished with sesame seeds before it is made into a bread.Sesame seeds embellishes the taste of the Bhakri ,usually served with vegetable curries.Typical curry would be stuffed brinjal curry.

Ingredients for the Bajra Flour Bhakri.
Bajra flour (Millet flour)- 2 cups. ( I used Jalpur brand)
Hot water-1 cup ( and some extra water,no need of hot water )
sesame seeds-1 tbsp

Add boiling water to get the rotis easier to make and tastes better too.
  1. Heat water is a bowl and bring it to boil.Switch off the stove when the water starts to bubble.
  2. Take Millet flour on your couter top,keep adding the hot water little by little into the flour as you mix it with the flour.You might need a spatula to mix it well.
  3. Do not put all of the water into the flour,knead it into a firm dough.
  4. Take a part of the flour ,a little ball of it (as much you need it for a roti or chapathi).knead it again with  wet hands and press in the middle (a thick  disk shaped).
  5. Apply the sesame seeds on top of it.
  6. Sprinkle flour on the couter top ,put the sesame seeds topped dough ball.Dust your hands with a little Millet flour.
  7. Keep patting the dough on all the sides in circular patterns ,keep expanding it till you get it into a roti shape and thickness.
  8. Scrape off the dough from the bottom with a spatula,pick it up with the spatula to your left hand and then to your right hand and then palce it on the heated griddle,so that the side with the dust of flour is seen on top.
  9. Sprinkle  a few drops of water on the Bhakri
  10. Bake it on both the sides .
  11. Serve with raw onions and brinjal stuffed curry.



Add water to bajra flour just when it starts bubbling. Keep adding
little by little.Mix it with a spatula.Make a stiff dough.
Add slightly boiling water to get good consistency to make.

Take a small lump of it and knead it with a few drops of 
water and make it into oval shape.

Apply sesame seeds on top and press.

Add flour on the working place and sprinkle flour on the 
oval shaped dough.Make sure your hand are not wet.
Start patting with your fingers all over,shield your left hand palm
while patting the roti.This makes the roti not to break at the ends.
Keep patting while turning to spread the dough into roti size.
You can dust your hands with flour to make it dry,if your
fingers are getting stick to the roti.


After patting and spreading the roti.

Scrape off the roti from the bottom with a spatula.

Transfer it to left hand and then from left hand to the right hand.
flip the roti from the right hand on to the heated griddle. 

The bottom part of the roti while patting comes on top
of the griddle.The griddle should be hot when you are making rotis.


Sprinkle a few drops of water.

When it starts rising a little,flip it and cook it on both the sides.
