Adai and Kurma


Adai is a type of dosa made with diferent types of daals saoked together and grinded with the a few spices  .Copied this completely with the help of my friend as I liked the way she made them.This is very congenial with kurma.The thickness of the Adai makes kurma more appealing.

Ingredients for Adai,
Chana daal- 1 cup
Toor daal- 1 cup
Moong daal- 1 cup
Long grain rice- 1 cup (I used parboiled rice)
Idli rice- 1 cup
Urad daal-3 tbsp
Jeera- 1 teaspoon
fennel seeds-1 tsp
Red chillies-2
Salt- According to taste.


  1. Soak all the grains,chana daal,toor daal,moong daal,long grain rice,idli rice and urad daal for about 8 hours.
  2. Grind all the saoked ingredients with Jeera ,fennel,red chillies and salt.Add water enough to grind it into batter.
  3. Leave the batter for about 1/2 an hour. 
  4. The batter is ready to make Adai or dosas.

Ingredients for Kurma,
Ingredients for the masala,
Coconut- 1/2 cup grated ( fresh coconut)
Roasted chana daal- 1/4 cup
Jeera- 1 tsp
fennel seeds- 1 tsp
Green chillies- 2 to 3
Khus khus-1 tsp
Garlic- 2 pods

Vegetables used for kurma,(All cut into small pieces),
Onion-1/2 cup 
Tomatoes- 1/2 cup
Potato- 1/2 cup
Peas- 1/2 cup
Carrots- 1/2 cup

  1. In a pan pour a tbsp of oil , add mustard seeds (1 tsp) as they splutter,add cinnamon (1/2 inch stick),cloves(2) and cardamom (2) ,curry leaves .
  2. Add all of the Ingredients for the masala to this and just toss them a little till they are warm.
  3. Grind them all into a fine paste with water.(around 1/2 to 1 cup)
  4. Saute all the vegetables in a pan in a tbsp of oil, add the grinded paste to this and a little salt.
  5. Cook this for about 5 minutes.
  6. Kurma is ready to be served.


In a pan pour a tbsp of oil , add mustard seeds (1 tsp) as they splutter,add cinnamon (1/2 inch stick),cloves(2) and cardamom (2)  .



Add jeera and fennel seeds.


Switch off the stove.
Add poppy seeds(/khuskhus),garlic,roasted chana dal and
grated coconut.Add green chillies tooToss in a little and then 
grind this in a blender along with water.




Take a tablespoon of oil in a pan and the saute all
the chipped vegetables.Sprinkle a little salt.


Add the grinded paste and salt and cook on low flame
for about 5 min.
