Chocolate Fudge


My kids have craze for chocolate flavor. I happen to come across this recipe which could be done in 5 minutes.I tried this and my kids loved it.I have used walnuts to fill in the fudge ,you can use what ever nuts you want to.Walnuts are very tasty nuts and not so hard to munch.Walnuts are a good source of omega 3 too.
I prefer walnuts more than any other nuts in my fudge.


Ingredients,
Semisweet chocolate chips- 12 ounces
Sweetened condensed milk - 14 ounce can
Walnuts - 11/2 cups ( broken in small pieces)
Vanilla extract -1 teaspoon


  1. In a large bowl ( make sure it is quite big because the condensed milk is going to rise when it is being heated)pour the sweetened condensed milk and add the semisweet chocolate chips.
  2. Heat it for 5 minutes in microwave oven.
  3. Mix well and add the walnuts and 1 teaspoon of vanilla extract.
  4. Mix well.
  5. Line the baking tray with parchment paper and pour this heated microwave mix on the parchment paper.Spread well.
  6. Put it in the refrigerator for an hour and cut them into pieces.

Take a 12 ounce semisweet chocolate chips and
a 14 ounce can of sweetened condensed milk.


Pour them in a large bowl.


Mix well.


Heat it in microwave oven (I took break in between after
2 minutes and heated again for 3 minutes.).Mix well.
Add 1 teaspoon of vanilla extract.



Add 1and 1/2 cups of walnuts ,coarsely chopped.
Mix well


Pour this hot mix over the parchment paper lined
baking tray or any tray.Refrigerate for 1 or 2 hours.



Cut them into pieces.



Chocolate fudge.

Besan laddoo

Besan or chickpea flour laddoos are quite common at our place ,made for every other occasion.Its a delicacy that everybody craves for. This ones taught by my Mother in law. The chickpea flour used should be perfectly roasted in ghee,if not then this might upset the stomach. I have seen many other websites where they have used almonds or pistachios to decorate the laddoos I have used our traditional option of just adding cashews and raisins. The sugar measurement should be a little more than the besan flour.


 Ingredients,
Chickpea flour- 2 cups ( Besan)
Sugar- 21/2  cups ( you can use 2  cups if  using raisins, we are a sweeeeet eating family)
Ghee-  1/2 cup + 1/4 cup. (if using only 2 cups of sugar,add only 1/2 cup of ghee)
Cashews- 2 tbsp and few extra for garnishing.( cut into small pieces) and some extra for garnishing.
Raisins- 1 tablespoon
Cardamom powder- 10- 11 ( seeds to be powdered,I do not use powdered cardamoms because they usually  loose their aroma  once the pack is opened)


  1. Take chick pea flour in a pot slowly add ghee to it and put this on stove on a low flame.Mix.This mix will be very thick and hard to roast.
  2. Slowly ghee starts melting and flour will be easy to stir.
  3. Keep stirring until the raw smell of the flour is gone,it takes about 8 - 10 minutes.
  4. Now you can see the ghee coming out of the flour,take this out of the pan and pour it into a bowl to cool down just a little.
  5. Roast cashew nuts  and raisins in  1 tablespoon of ghee to slightly brown color.
  6. Let this cool for about 2 minutes and then add sugar and cardamom powder.
  7. Take a hand full of this mix and roll it all around and make laddoos.
  8. Before you give a nice proper shape,add a small piece of cashew on the top of the laddoo and give it
  9. a proper shape.
  10. Store them in air tight jar.
Take 2 cups chickpea flour.

Slowly add ghee and keep it on a low flame.

slowly stir.

Until the mix melts completely with roasted chickpea flour starts
leaving its aroma and you get a nice mustard color.

Pour it into a bowl and allow it to cool for a few minutes.

Roast cashew nuts and raisins in 1 tbsp of ghee.

Add cardamom powder.



Add roasted cashew nuts and raisins with sugar.


Take a lump of the mix and mold it into laddoo with 
your palms with a small pice of cashew on top.

Give it a nice shape.

Sakkarpara/Shankarpali

Sakkarpara is a sweet made with all purpose flour and sugar and deep fried.There are two varieties of this dish .One is  Sakkarpara and the other done with the same dough and deep fried but with salt and red chilli powder made as namkeen.Sakkarpara are deep fried crispy and crunchy sweets.

Ingredients,
All purpose flour / maida - 1 cup
Sugar - 1/2 cup
Sodium bi carbonate- a pinch
Milk - enough to knead into dough ,Takes less than 1/4 cup
Cooking oil- for deep frying.

Mix all purpose flour and sugar. Add sodium bi carbonate.
Slowly add milk to knead it into dough.
Roll it flat with a rolling pin.Thin enough but not paper thin
Cut them into rows and columns so as to cut them into squares.
Deep fry them in cooking oil  until golden brown.

Mix Miada ,sugar,sodium bi carbonate with milk.


Roll it flat .


Cut them into rows and columns.


Fry the squares until they are golden brown in color.
