Quinoa Salad

Quinoa is one of worlds healthiest grains known to have good amount of proteins, calcium and iron.Quinoa recently has gained a lot of popularity due to its Heath benefits.It so easy and quick to cook.Quinoa is also gluten free grain/ cereal.
Cooked quinoa is fluffy and easily blends with any kind of vegetables for a palatable salad.It is very important to rinse quinoa before use as they have soapy coating that is a natural insecticide.Although they say that packaged quinoa is prerinsed I noticed slight bitterness from quinoa when it is not rinsed.


Ingredients,
Quinoa - 1/2 cup
Cucumber- 1/2 cup (cut into cubes)
Parsley - 1/2 cup ( I have used curly leaf parsley )
Lemon juice - 1 tablespoon
Extra virgin olive oil- 1 tablespoon
Salt and black pepper - a dash


Take 1/2 cup of quinoa and rinse (this could remove the soapy coating of quinoa which is a natural insecticide) and cook it with 1 1/4 cup of water until it starts boiling. Once it starts to boil bring the stove heat  to low or to simmer (keep stirring)and cover it with a plate until all the water is evaporated.Fluff it with a fork.Switch off the stove and keep the cooked quinoa aside.

Slice the cucumbers to cubes ( 1 inch approximately).Take 1/2 cup of parsley.

For the dressing, mix 1 tablespoon of olive oil,1 tablespoon of lemon juice and a dash of salt and black pepper.

Now in a bowl mix cooked quinoa,cucumbers and parsley.Pour the dressing over on top and mix well.



Cook 1/2 cup of quinoa with 1 1/4 cup of water.Once
the quinoa starts to boil simmer the stove and cover it.
Keep stirring every now and then.Switch off the stove after
all the water has evaporated.


Add 1/2 cup of cucumbers and curly leaf parsley.


Prepare the dressing with lemon juice ,olive oil,salt
and black pepper.Pour over the quinoa,cucumbers
and parsley.



Mix well.This can even be made ahead of time before 
serving.
