Sweet Potato And Tomato Sandwich

Kids are so energetic and lunch is the thing that they have to finish in a few minutes ( although they have plenty of time for lunch). Sandwich is the one thing that can make them interesting and quick for them to eat. This is the sandwich with sweet potato which has so much of carbs ( it has a lot of vitamins and calcium too)that it will take care of  their schedule for the rest of the day ,at least till my kids come back home. I have used tomatoes also,to include a vegetable. This is mild although it has ginger in it. Sweet potato patties are made with olive oil and sandwiched in bread toasted with butter.

Ingredients,
Sweet potato - 1
Tomatoes - 3-4 slices
Ginger- 1 tbsp ( grated)
Coriander - 1/2 cup
Salt - 1/4 tsp
Rice flour- 1 tbsp
Olive oil - 1/2 tsp
Butter - 1/4 tsp for one sandwich roll ( or  for each of the  two bread slices )


  1. Cut the sweet potato into three parts and cook them till three whistles in a cooker and peel off the skin.
  2. Mash the potatoes ,add grated ginger , chopped coriander leaves,salt and rice flour.
  3. Pat them into square shapes or any desired shape and bake it in a hot pan(on a stove top) with olive oil on both the sides.
  4. Take  a sandwich roll and cut into two pieces . Apply butter on the inner side of the bread and toast it.
  5. Turn this on the other side and slightly toast it.
  6. Put the sweet potato  patty and sliced tomatoes in between two toasted sandwich bread slices.
Cook sweet potatoes and peel off the skin and mash them.
Add ginger,salt and rice flour and mix well.


Pat them into square shapes and toast them both the sides with 
olive oil or butter.

Toast it.

Cut the sandwich roll in the middle.

Toast it with butter on  the sides with butter.

Toasted sandwich roll.

Add the sweet potato paaty .

Add sliced tomatoes.

Sandwich.

Cut it diagonally.

Sweet potato and tomato sandwich.
