Chole Masala

I must say that Chole Masala is most common almost everywhere ,where people make this quite often.Just as rajma ,I didn't want to make this the typical way of using ready made masala powders.
Sometimes making things from the scratch makes me feel good about my efforts.
Nothing tastes better than fresh ground spices.Although sometimes we use store bought garam masala,but the garam masala made at home from the scratch tastes way better than the store bought ones.

Ingredients,
Chick peas- 1 1/2 cups ( unsoaked)
Onion- 1 small ( I used 3/4 of a big onion)
Tomatoes- 2
Ginger- 1 tbsp (chopped)
Amchur- 1/4 tbsp
Oil- 2 tbsp
Salt- 1/2 tbsp

For the Masala Powder,
Black Cardamom- 1
Bay leaf- 1 (small)
Black pepper- 4 to 5
cloves-2
Cumin seeds- 1/2 tbsp
Fennel seeds- 1/2 tbsp
Red chillies- 2
Coriander seeds- 1/2 tbs


  1. Roast all these spices in pan and grind it into a fine powder.
  2. Soak chick peas overnight,drain water and cook them in pressure cooker for 4 whistles.
  3. Saute onions and ginger and then tomatoes in 1 tbsp of oil until tomatoes are softer.Grind this into a fine paste with 1/2 cup of water.
  4. Take a tbsp of oil in a pot,add the ground paste with cooked chickpeas and the masala powder prepared.Add 1/4 cup of water.
  5. Finally add Amchur and salt and cook well for 5 minutes on low flame.
  6. Garnish with grated cheese .

Roast black cardamom,bay leaf,black pepper,cloves
cumin seeds,fennel seeds,coriander seeds and red chillies


And grind it into a fine powder.

Saute onion,ginger and tomatoes in a tbsp of oil
 and grind it into a fine paste.

In a tbsp of oil,add ground paste and cooked chick peas .

Add the prepeared masala powder,amchur and salt
Add 1/4 cup water and cook well for 5 minutes on low flame.

Chole Masala.
