Black Bean Salad


Black bean salad is very colorful,tasty and healthy salad that is so good to be on your dining table.Black beans are high in fiber too.Black beans along with corn,onions,tomatoes makes it so irresistible.I have soaked and then cooked the black beans,you don't have to do this if you are using canned black beans.
Try this for some tortilla chips or use them up in tacos.You can make it your own variation by adding some avocados also.

Ingredients,
Black beans - 1 cup ( Soaked in water overnight and then cooked or canned)
Sweet Corn - 1/4 cup ( frozen ,thawed)
Coriander /Cilantro - 1/4 cup
Onions - 2 tbsp (chopped)
Tomatoes - 2 tbsp (chopped)
Lemon juice- 1/2 tablespoon
Olive oil- 1 teaspoon
Salt- 1/4 tsp
Black pepper- 1/4 teaspoon
Rice Vinegar - 1/2 tbsp
Garlic - 1 tsp
Jalapenos - 1 tsp


  1. Soak minced garlic and finely chopped Jalapenos in vinegar in a small bowl.(You can avoid jalapenos if making for kids )
  2. In a large bowl take black beans,onions,tomatoes,corn and cilantro.
  3. Add lemon juice and olive oil.Add the soaked garlic and jalapenos in vinegar to the black beans.
  4. Finally add salt and black pepper and mix everything together.


Soak minced garlic and finely chopped Jalapenos in vinegar
 in a small bowl.


In a large bowl add chopped onions and tomatoes.


Corn and cilantro.Add lemon juice and olive oil.

Add soaked vinegar along with salt and black pepper.
Mix well.

Carrot Parsley Salad


Carrots are one of the most widely used antioxidant vegetable.Both carrots and parsley offer a lot of vitamins.The combination of carrots and parsley in one salad makes this salad full of vitamins.Both carrots and parsley being antioxidant,their combination is a very good choice.
I have made my own dressing for this salad.If you want you can add a different dressing.I have used curly leaf parsley,flat leaf parsley have a very strong smell.If you want you can add Italian parsley (flat leaf parsley) too,I never tried this with Italian parsley.

Ingredients,
Carrots - 1/2 cup (cut in small cubes)
Parsley - 1/2 cup (chopped, I used curly leaf parsley)

Dressing,
Olive oil - 1/2 tbsp
Lemon juice - 1/2 tbsp
Mint leaves - 1/2 tbsp (finely chopped leaves)
Salt - A little lesser than 1/4 tsp
Black pepper powder - 1/4 tsp


  1. In a bowl mix olive oil,lemon juice,mint leaves,salt and black pepper.
  2. In another bowl take carrots and parsley and mix them.
  3. Add the prepared dressing to carrots and parsley and give it a toss.
In a bowl mix olive oil,lemon juice,mint leaves,salt
black pepper powder.Mix well

Take carrots and chopped parsley and add the 
prepared dressing and mix well.
