Carrot Parsley Salad


Carrots are one of the most widely used antioxidant vegetable.Both carrots and parsley offer a lot of vitamins.The combination of carrots and parsley in one salad makes this salad full of vitamins.Both carrots and parsley being antioxidant,their combination is a very good choice.
I have made my own dressing for this salad.If you want you can add a different dressing.I have used curly leaf parsley,flat leaf parsley have a very strong smell.If you want you can add Italian parsley (flat leaf parsley) too,I never tried this with Italian parsley.

Ingredients,
Carrots - 1/2 cup (cut in small cubes)
Parsley - 1/2 cup (chopped, I used curly leaf parsley)

Dressing,
Olive oil - 1/2 tbsp
Lemon juice - 1/2 tbsp
Mint leaves - 1/2 tbsp (finely chopped leaves)
Salt - A little lesser than 1/4 tsp
Black pepper powder - 1/4 tsp


  1. In a bowl mix olive oil,lemon juice,mint leaves,salt and black pepper.
  2. In another bowl take carrots and parsley and mix them.
  3. Add the prepared dressing to carrots and parsley and give it a toss.
In a bowl mix olive oil,lemon juice,mint leaves,salt
black pepper powder.Mix well

Take carrots and chopped parsley and add the 
prepared dressing and mix well.


Carrots and parsley salad.
