Spicy Pasta With Mushrooms


There is a simple way to cook pasta , cook pasta the Italian way.By adding cooked pasta to a sauce makes the pasta to soak up all the flavors of fresh herbs and mushrooms.
Mushrooms add flavor and texture of the sauce.I have also added baby arugula to this pasta.You can also make this your own flavor by adding onions and any other veggies you would like to add to pasta.Even arugula has a bit of spicy flavor.
I have even used jalapenos to make it spicy its not required if you are making it for kids.Jalapenos can be replaced with just a dash of red pepper flakes if needed.


Ingredients,
Pasta - 1 1/2 cups ( I have used rotini pasta,any pasta can be used)
Freash oregano - 2 tablespoons
Baby Arugula - 4 cups (roughly chopped at last minute)
Mushrooms- 1 1/2 cups (sliced)
salt - according to taste
Jalapeno- 1 (sliced length wise into 4-5 long pieces)
Olive Oil - 3 tablespoons
Pasta liquid - 1/2 cup ( liquid that is left over after cooking pasta in it with all the pasta drained)
Parmesan cheese - 1/2 cup (grated)


Take a large pot and add water and pasta to it.Add salt around 1/2 a teaspoon.Let the pasta cook completely.Drain the pasta and keep the 1/2 a cup of cooking liquid aside.

In a large pan add olive oil ,jalapenos and mushrooms.let the mushrooms cook.

Add chopped fresh Italian oregano.

Now add cooked and drained pasta.Add cooking pasta water and cheese.stir until the sauce has thick consistency on low flame stove.

Add arugula ( roughly chopped) and stir well.



Take a pan with 3 tablespoons of olive oil ,add jalapeños and mushrooms.Saute till the mushrooms are cooked( they turn into dark brown color once they are sauted)


Add fresh Italian oregano.


Add cooked and drained pasta.


Add cooking water (1/2 cup) and then shredded cheese.keep the stove on low flame until the sauce has thick consistency.Put the stove on low flame.


Add arugula and mix well.Serve hot.
