Spicy Boondi / Khara Boondi


Spicy boondis are most common during weddings and other grand functions in southern part of India.I made these for my kids to snack on.it is one of my convenient things to do when I am busy with my kids' school schedules.
Spicy boondis are made with besan batter and deep fried.This is not at all an effort taking snack it is easy to do at home,the trick is if you use a big pan to fry with a lot of oil then you can fry these and finish making real soon.


Ingredients,
For the batter-
Besan - 2 cups
Salt - 1 1/2 - 2 teaspoons ( should be a little less than 2 teaspoons,vary according to taste)
Red chili powder - 1 teaspoon
Hing - a pinch
Water -1and 1/2 cups
Oil - for deep frying

For the tempering,
Oil- 2 tablespoons
Mustard seeds - 1/2 teaspoon
Hing - a pinch
Curry leaves - 4-5 ( roughly torn)
Roasted Chana dal - 1 tablespoon
Peanuts -1 tablespoon
Dry red chili -1 ( roughly broken)
Red chili powder - 1/2 teaspoon ( change according to your taste you can add or omit)

In a large bowl mix besan with salt, red chili powder,hing and water.

Keep oil for deep frying,once it is hot enough pour a handful of the batter over perforated ladle.

Place the perforated ladle on the deep frying pan and deep fry the boondis.

After all the batter is made into boondis,in a pan take oil add mustard seeds ,once they crackle add hing, curry leaves, roasted Chana dal , peanuts and dry red chili which is roughly broken.

Now add the the deep fried boondis and mix until the boondis are warm.Add red chili powder.Make sure the boondis don't get browned.

Transfer to a airtight jar to preserve.

In a large bowl mix besan with salt, red chili powder,hing.


Mix with water.


Take this kind of perforated ladle.


Pour the prepared batter over this and let the small drops
of batter fall into the pan of hot oil.You can run your fingers 
over the perforated ladle to make the batter fall in hot oil
easily.

In a pan take oil add mustard seeds ,once they crackle add hing, 
curry leaves, roasted Chana dal , peanuts and dry red chili which is roughly broken.


Add red chilli powder after the boondis are a little
warm.
