Paneer tikka kababs are my kids favorite so I tend to make them quite often.We had been to a party where my kid had this paneer tikka kabab and went frenzy about it.He was just four years then.He had little bit of everything other thing and this was his main course meal.Well, even today my kids have taste buds for these.
I have been making them a lot now a days.I usually make these in my oven.You can even try them out on griddle.
Paneer tikka kababs are made out of paneer (cottage cheese) and toamtoes ,onions and bell peppers which are marinated before they are baked.
Ingredients,
Yogurt - 1 cup ( well beated)
Ginger garlic paste- 1/2 tbsp (i took a small peice of ginger and 1 garlic pod and crushed them into paste)
Red chilli powder - 1/2 teaspoon
Tandoori masala - 1 teaspoon
Garam masala - 1 teaspoon
Kasoori meth- 1/2 teaspoon
Salt - 1/2 teaspoon (vary according to taste)
Aamchur - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Paneer cubes - 2 cups
Bell peppers (any color) - 1/2 cup ( cut into squares)
Onions - 1/2 cup ( cut into squares)
Tomatoes - 1/2 cup ( cut into squares)
Cut the paneer into cubes and the veggies into squares.
In a bowl take yogurt and add red chilli powder,tandoori masala,garam masala,kasoori methi,salt,turmeric and aamchur.Mix well.
Add the paneer cubes and the vegetable cubes into the yogurt mix.
Toss well and cover with cling wrap and let it marinate for 2 or more hours.I usually end up marinating for 3-4 hours.
Remove the bowl from the refrigerator and pierce the paneer cubes and veggies to kabab skewers.Slightly brush them with oil and line them on parchment paper.
Heat the oven to 480 F.After the oven is preheated place the kabab skewers in the oven and bake for 20 minutes or until charred.

Then cut them into small squares.Do the samething with
tomatoes and onions.Cut the paneer into cubes.
In a big bowl add red chilli powder,tandoori masala,garam masala,kasoori methi,
salt,turmeric and aamchur to yogurt.Mix well.
Add the chopped veggies and paneer cubes to the yogurt mix.
Mix well.
Cover the bowl with a cling wrap and refrigerate it
for 2 or more hours. (It need not be exactly cling wrap you can even
cover this with a plate)
Pierce the paneer cubes with vegggies in between.
Smear oil.Bake at 480 F for about 20 min or until charred.
Paneer tikka kabab.
