Kale Soup


Kale is high protein,phytochemical king of all vegetables.This vegetable I had least knowledge of, got to know about this from my son because of his class teacher.He always says good things and importance of kale.My son totally adores his class teacher and wanted to try this vegetable.Soup is the first thing i tried with kale.I have tried using this in many recipes including sambar.Kale soup has a nice taste like veg soup.
Kale has a bitter taste ,so I sauted and then boiled it in vegetable broth.After cooking kale tastes like cabbage.

Ingredients,
Kale - 8-10 (small leaves,Big leaves - 3-4)
Olive oil- 1 tsp
Onions- 1 tablespoon ( finely chopped)
Garlic - 1 tablespoon ( minced)
Carrots - 3 tablespoons (finely chopped)
Vegetable stock - 2 cups
Water - 1 cup
Corn starch - 3-4 Teaspoons
Salt and Black pepper- According to taste


  1. Take kale leaves,wash them and cut the middle stem off.Chop the rest of the leaves.
  2. Mince garlic and chop onions and carrots and keep aside.
  3. In a pan take olive oil and add minced garlic and chopped onions.Saute a little.
  4. Add chopped carrots and kale leaves.Saute them .
  5. Add vegetable stock .Mix corn starch with water and add it to the pan too.
  6. Bring it to boil.Allow it to boil for 3-5 minutes or to desired consistency.
  7. Add salt and black pepper and stir well.
Wash the kale leaves and cut the middle stem off.


Chop the leaves.

Ina pan take oilve oil and saute the minced garlic and 
chopped onions.


Add kale leaves and chopped carrots and saute them too.

Add vegetable stock.


Mix corn starch with water.

Add it to the pan.

Bring it to boil and allow it to boil for 3-5 minutes or
to your desired consistency.

Finally add salt and black pepper and stir well.


Kale soup.
