Carrot Halwa/ Gaajar Ka Halwa


Carrot halwa is the most exquisite dessert for Indian buffets. Carrots are grated and then cooked in milk till the carrots and milk are condensed to thick consistency.This is done for any important occasion.These are usually served with icecream on top of it.We used to do this at home without mawa but now a days people add mawa to this recipe.I have also tried this with mawa and it tastes great.
The carrots I have used are organic and tender ones.I made this for Dushera festival.


Ingredients,
Carrots- 2 cups ( grated)
Milk- 2 cups
Sugar- 1/4 cup
Cashew nuts- 10-11 ( partly slit)
Ghee- 1/4 cup
Milk Mawa- 1/4 cup
Cardamom powder- 4-5 ( seeds ground into powder)


  1. Scrape any black parts and skin if the skin is too thick.Grate carrots and measure them to 2 cups.
  2. In a a heated pan take 1/4 cup of ghee and saute the grated carrots for 3-4 minutes.
  3. Slowly add milk and keep stirring.
  4. After 20 minutes of stirring add sugar and cardamom powder.Keep stirring for 5 minutes.
  5. Add milk mawa and cashew nuts.Sitr again for another 5-6 minutes.
  6. Remove from hot pan and tranfer it to cool bowl .
  7. Garnish with cashews.
Saute carrots in ghee for 3-4 minutes.

Add milk and stirring.Stir for 20 minutes.

Add cardamom powder and sugar and stir again for 
another 5 minutes or until the gravy thickens.

Add milk mawa and cashew nuts and stir for another
5-6 minutes.
After the halwa is completely cooked.Transfer to
a bowl.
