Thenglu / Murukku

Butter Murukku or Thenglu in Karnataka is a deep fried snack made out of rice flour.This use to be my favorite snack when I was a kid.This is the perfect tea time snack,this is usually done during festivals like Diwali or Navrathri festivals.
This thenglu/ Murukku is done with both rice flour and urad flour along with salt,cumin,asafoetida and red chilli powder.


Ingredients,
Rice flour - 3 cups
Urad flour- 1 cup
Salt - 1 tablespoon
Red chilli powder- 3/4 of a tablespoon (Vary according to taste)
Jeera- 1 tablespoon
Asafoetida/Hing- a pinch
Butter- 2 tablespoons
water - enough to knead into dough
Cooking oil- For deep frying.


  1. Take rice flour and urad flour in a large bowl and add red chilli powder,salt ,asafoetida and cumin seeds.Mix well.
  2. Add 2 tablespoons of melted butter.
  3. Add water little by little and mix well into dough.Just like chapathi/roti dough not too hard and not too soft.
  4. Grease the chakli press and the perforated plate with cooking oil.Place the plate inside the chakli press.
  5. Take a handful of the dough and press into the chakli press.Place the lid and turn to get a murukku shape.
  6. Deep fry them in oil on both the sides on medium flame one by one.
  7. Place them on kitchen tissue paper and store them in air tight jars.


Take rice flour and urad flour in a large bowl.

Add red chilli powder,cumin seeds,salt and hing and mix
well.

Add melted butter.


Slowly add water little by little and make dough.


Grease the inside part of chakli press and the perforated
plate with cooking oil.

Place the perforated plate inside the chakli press.


Take a handful of dough and press it inside the chakli press.


Place the lid and make murukku shapes

Make murukku shapes and the deep fry them in oil
on both the sides on medium flame one by one.
You can even directly press them in hot oil if you are 
comfortable.

Chakli ( Murukku)

Chakli is traditional snack made out of rice flour. Chakli is made for festivals like Diwali and Navrathri.During Navraathri festival we make these and offer it to Goddess Durga.Dushera and Diwali are two most important festival for us.This snack is also made for diwali festival.



Ingredients,
Rice flour- 3 1/2 cups
Roasted chana dal flour- 3/4 cup
Sesame seeds- 1 tbsp
Red chilli powder- 1 teaspoon ( vary according to taste)
Salt-1 tablespoon
Cumin seeds- 1 tablespoon
Vegetable Shoretning/ Butter- 1 1/2 tablespoons
Hing- 1/4 teaspoon
Warm water- enough to knead it into dough
Oil- for deep frying


  1. Heat water of about 1 1/2 cups in a bowl until it starts to boil.
  2. Mix all the ingredients except shortening in a bowl.
  3. Heat the shortening in a bowl and add it to the bowl.
  4. Add the warm water to the flour mix and knead it into a dough.
  5. Grease the chakli press with oil.
  6. Take a hand full of dough and put into the chakli press and close it with the lid.
  7. Slowly press the handle with a little force in spiral shapes.
  8. Deep fry them in oil on both the sides.
Roasted Chana Dal.
Grind it into a fine powder (in mixie or blender)


Mix all the ingredients except the shortening and water.

Add the melted shortening

Knead it into dough with warm water.

Grease the chakli press with oil.



Put a handful of dough into the press.

Closse the lid and press the handle with a little force
in spiral shapes.

Seal the loose end.Deep fry in oil on both the sides.

Mangalore bajji/Goli Baje

These are elasticy ,spicy fritters from southern Karnataka.These are made from maida,soaking it in yogurt for upto four hours with a few spices are absolutely luscious.Unlike bonda these fluff up from just a little batter.
These are also called goli baje,perfect for tea time snacks.



Ingredients,
Maida- 1 cup (all purpose flour)
Yogurt- 1/4 cup
Coconut- (small chunks) - 1/4 cup
Green chillies- 2 ( finely chopped)
Curry leaves- 1 sprig ( leaves separated and cut into small pieces)
Ginger- 1/2 tbsp (cut into small pieces)
Salt- 1 teaspoon
Bicarbonate of soda- a pinch (usually 1/4 tsp is used,but I have only used a pinch)
Cooking oil- for deep frying.


  1. To 1 cup of maida,add yogurt,coconut,green chillies,curry leaves,ginger,salt and bicarbonate of soda.
  2. Mix well add water required.(1/4 cup and 2-3 tablespoons more if required)
  3. Allow it to rest for about 4 hours.
  4. Heat oil in  pan and keep it on medium flame.
  5. Keep pouring a spoon  of batter at a time.
  6. Each batter will puff up,fry until golden brown both sides.
coconut,small pieces of ginger,green chillies,curry leaves
chopped in small pieces.


Mix all the above ingredients with maida,salt,bicarbonate of soda
and yogurt (add water required,1/4 cup and 2-3 tablespoons more if required)).
Allow it to rest for 4 hours

After resting for 4 hours.Slowly drop a spoon at a time
in hot oil and deep fry them.
