ingredients for set dosa,
Uncooked rice - 2 cups(usually sona masoori rice is used)
urad daal-1 cup
Channa daal-1/4 cup
methi seeds(fenugreek)-1 teaspoon
poha ( Beaten rice) -1/2 a cup(thin preferably ,thick does good too )
Salt- according to taste.
Soak all the dry ingredients except poha for 8 hours.Soak poha in a cup of water just before you grind all the soaked ingredients.Grind all the soaked ingredients to a fine paste.Add very little water while grinding enough to make it a thick batter. Add soaked poha while grinding the batter.Tranfer the batter to a bowl and cover it.( I usually divide the soaked ingredients into 3-4 parts and grind each batch with 1/2 - 1/4 cup of water)
- Ferment it for 8 hours.Add salt to this fermented batter.
- Once the tava is hot pour some water.Put the stove on low flame.let the water evaporate.
- Take a ladle full of batter and pour it on the heated tava.Pour one more ladle full of batter on top of each other.Put the stove on slightly higher than medium flame.
- Let the batter expand by itself .If required press the laddle in the middle of the batter to make it flat in the center.leave it on low flame for a few seconds.When you see pores forming on top of the dosa,you know that its time to flip it.
- Spread ghee/oil all over.
- The bottom of the dosa must be golden brown in color by now.Flip it and bake on the other side.Serve hot with Saagu.Saagu is ideal for these dosas.Chatni and sambar also goes well with these.
