Masala dosa

Love masala dosa,kids just love the taste of it so do elders.When i used to search on internet i found many of the recipes with many different combinations of rice and urad daal,but i just stick to a old recipe i had read long back.The ingredients with Rice ,Parboiled rice and urad daal.Par boiled rice is also available in indian supermarkets they are called Kuduklakki(ಕುದುಕ್ಲಕ್ಕಿ ) in kannada.

ingredients for Masala dosa,
Par boiled rice-1 cup
sona masoori rice-2 cups
urad daal-1 cup
methi seeds-1 tbsp

Soak all the ingredients in water for 7 to 8 hours and grind this into batter.I usually  divide the soaked ingredients into 3 parts and grind it with almost 1/2 a cup of water for each batch and ferment it overnight(8 hours).Add 1 tbsp of salt to the fermented batter.

Ingredients for the garlic chutney spread for the dosa,

  • 1/4 cup- fresh grated coconut
  • garlic pods-3(skin peeled and chopped)
  • urad daal-1 tbsp
  • Salt and Red Chilli powder - According to taste.
  • tamarind juice-2 tbsp(I usually soak tamarind for 1 hour and take the juice out of it ).Remember if you are using tamarind extract use only a pich of it and dilute in  2 tbsp of water .




  1. Roast the urad daal in a pan and make powder out of it.
  2. To this add tamarind juice ,coconut and garlic pods and grind it well in a blender along with salt and red chilli powder.

  1. Heat the tava.Once it is hot put the stove on low flame and sprinkle a hand full of water.
  2. Take a ladle full of dosa batter and pour it on the heated tava (put the flame on slightly high) in circular patterns and make dosa.
  3. Spread the garlic chutney in the center.Spread ghee all over.
  4. Roll the dosa into a log and serve with potato curry.

Once the griddle/tava is heated put the stove on low flame,pour some water.After the water evaporates  spread the dosa batter.After spreading put the flame back on slightly more than medium until the dosa is browned and then remove the dosa from the tava..Repeat  this for each dosa.

Once the griddle is hot put the flame on low and then
sprinkle some water.after the water evaporates,pour in the batter

Put the flame of the stove on slightly more than medium.
(note that the batter should be smooth or else
the dosa will not be easy to make)



pour in oil/ghee and the put the potato
curry in the middle


Scrape of the edges first and the slowly
fold into from both the sides.Transfer it to
a plate and serve.
