Paper dosa


Paper Dosa.
Paper dosa is a very thin and crispy dosa,perfect for those weekend breakfasts.It doesn't usually satisfy with one,since they are so yummy.
Ingredients for paper dosa,
Sona Masoori  rice -2 cups
Urad daal-1cup
Channa daal- 1/4 cup
Fenugreek seeds-1teaspoon.
Murmura-1/4 cup
Salt-2 tbsps.

Soak all the ingredients except the murmura in water for about 8 hours.Soak the murmura in a bowl of water just before you grind all the soaked ingredients.I usually divide the soaked ingredients into 3 parts and grind it with almost 1/4 -  1/2 cup of water for each batch. Add 1 -2 tbsps of salt to this fermented batter.
After  the ingredients are grinded,store in room temperature ,except for the winter times where you can keep in the oven(doesnt require heating the oven for fermenting ),and leave it to ferment.It takes about 8 hours to get fermented.Usually what I do is I soak all the ingredients in the morning and ready to grind it in the evening and leave it to ferment over night.Add salt to this fermented batter and add some water to it too.

The batter must be ready in the morning,the consistency of the batter must not be thick and should be watery and add salt to it.Take A ladle  full of batter and pour it on center of the heated pan and slowly revolve it in circular way.
Spread ghee all over.
Since the paper dosa is thin ,you don't need it turn it over.leave it on the pan for  a minute and your paper dosa is ready.Serve it hot with chutney and potato curry.For potato curry see this link - Potato Curry.

To make the paper dosa into a cone shape(kids will love them in a cone shape).Cut the dosa form the middle of the dosa to the edge of the dosa and start making it into a cone shape as shown in the pic below.

Once the griddle or tava is heated put the stove on low flame.Sprinkle some water and let it evaporate.Add dosa batter and spread in circular patterns and then put the falme of the stove on slightly higher than medium until you see the dosa getting browned.cut from one end to the middle and make cone shapes.
After the dosa is made put the stove on low flame and repeat the process to make dosas.
